Tasty Tuesday

I love to cook. And of course I love to eat. Doesn't everyone? I like to try new recipes as I come across them and this one I tried last night. To say it was a hit would be an understatement. I made a 13 x 9 pan, and between the three of us it was almost demolished. Pair it up with some cheesy garlic bread, or Italian bread sticks and you'll have a little taste of Italy in your kitchen. The recipe is easy to follow and doesn't take too long to make, which makes it perfect for a cool fall weeknight.



Baked Spaghetti


Here is the recipe for this deliciousness. 

  • 16 oz thin spaghetti
  • 1 lb italian sausage or hamburger, cooked
  • 24 oz jar spaghetti sauce
  • 2 eggs
  • 1/3 cup parmesan
  • 5 tbsp butter melted
  • 15 oz ricotta
  • 3 tbsp parsley
  • 1/4 cup sour cream
  • 4 cups mozzarella cheese
Preheat oven to 350 degrees. Lightly spray a 9x13-inch pan with cooking spray. Set aside.

Cook spaghetti according to package directions. Drain. Whisk together eggs, parmesan cheese and melted butter. Toss with pasta. Set aside.

Combine ricotta, parsley and sour cream. Set aside.

Combine spaghetti sauce and cooked sausage/hamburger. Set aside.

Layer half of pasta mixture, half of ricotta cheese mixture, half of meat sauce and half of mozzarella. Repeat layers.

Cover pan with aluminum foil and bake 35 minutes. Remove foil and bake an additional 10 minutes (until cheese is bubbly).

A Little Post About Me

Hi.

My name is Lisa.

I am new at this blogging thing, but I thought that my first post should introduce you to me, and my life.

I am a wife, mother to 2 wonderful daughters, a son who is nothing like me, 2 step daughters, 2 awesome dogs - Harvey, and Jacie,  and a cat that is antisocial that we named Satan. I have three grandchildren who I love to spend as much time with that I can. The oldest, Delilah, is almost 2 years old and suffers from Epilepsy and possibly Autism as a result. Next in line is Ryker, he is 16 months old and is busy, busy, busy. All the time...after he has been at my house it looks like a tornado went thru here. Lastly, there's Reagyn, she is a little over a month  old. Her personality has not really emerged yet, but she is a sweetie.

I live on a farm/ranch in western Kansas. My husband works at a feedlot just down the road from our house. I am a part-time Legal Assistant. When I am not working, I love to bake, and cook. I am a news junkie, a weather watcher, and a movie buff. I love to read books, romance novels, and historical fiction are my favorite. I am also a gadget guru, much to my Husbands dismay.

I hope that this blog has a little bit of something for everyone. There will be recipes, reviews, DIY projects, and maybe, if you're lucky, a little bit of funny! I am so excited to start this journey with the world.
